Healthy Sugar Free Homemade Coffee Creamer

Do you love coffee creamer, but are looking for a healthy sugar free version?  Here is your solution.  Make your own homemade healthy sugar free coffee creamer, with just three ingredients.

My personal coffee creamer dilemma came about with our moving from the US to Australia, where there is no such thing as International Delights Coffee Creamer.  We were having coffee creamer withdrawals, so I looked around online for homemade coffee creamer recipes and started making it myself.

Here is the recipe for homemade coffee creamer that I originally started with.  That recipe is very delicious, and uses sweetened condensed milk, which is fine for my trim husband, but for this health conscious girl, I could never bring myself to use it.  I really try to avoid sugar and watch my weight, so I needed a healthier solution.

This recipe is the solution to my coffee creamer problem.  It uses Stevia to sweeten the milk, rather than sugar.

Healthy Homemade Coffee Creamer

Here’s my healthy sugar free coffee creamer recipe:

Vanilla Coffee Creamer Ingredients:

1 liter whole milk (about 5 cups) or fat free half & half
4 tablespoons Stevia
2 tablespoons Vanilla extract

Whisk the ingredients together in a bowl and use a funnel to pour into a container.  Make note of the expiration date of your milk, and use the creamer by that date.

You can make other flavor combinations by switching out the vanilla for other extracts & spices.

Pumpkin Pie Spice Creamer:

2 tablespoons maple extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Almond Joy Creamer:

2 tablespoons chocolate extract
1 teaspoon almond extract
1 teaspoon coconut extract

You can experiment around with different flavor combinations.  Those listed above are my favorites, but you can make it your own, to suit your taste. 🙂

Birthday Punch

2 bottles Cran-raspberry juice
4 cups pineapple juice
1 bottle of ginger ale
1 tub of raspberry sherbet.
raspberries if desired
Make 2 trays of frozen Cran-raspberry juice cubes in the freezer.  Combine frozen cubes, and juices. Just before serving, slowly pour in the ginger ale.  Top with dollops of sherbet and raspberries. The pineapple juice can be adjusted to sweeten the punch. I like this punch to be a little tart since the sherbet is so sweet.

Watermelon Margaritas

4 Dulcinea Watermelon Stars
1/4 cup frozen Dulcinea Watermelon chunks
1/2 cup frozen strawberry pieces
1/2 cup lime juice
1/4 cup thawed frozen orange juice concentrate
1 tbsp. simple syrup* or sugar
1/8 tsp. salt
Dash liquid hot sauce (optional)
2/3 cup chilled tequila or Safeway Club Soda
6 tbsp. chilled orange liqueur (such as Grand Marnier or Triple Sec) or orange juice

*To make simple syrup combine equal parts water and sugar stirred over heat and brought to a boil, then cooled to room temperature.Steps (Watermelon Margaritas)  

In a food processor combine watermelon, strawberries, 2 tbsp. lime juice, orange juice concentrate, simple syrup, salt, and hot sauce. Whirl until mixture forms a smooth slush. (To make ahead and store up to 2 weeks, scoop slush into a resealable freezer bag and seal. When ready to use, let stand at room temperature to soften.)

In a small bowl, mix together tequila, remaining 6 tbsp. lime juice, and the orange liqueur; keep cold.

Into each chilled margarita glass (at least 3/4-cup size) mound about 1/4 of the watermelon-strawberry slush. In each glass, pour 1/4 tequila mixture over the slush.

Garnish each glass with a watermelon star on a skewer. Dip star in drink to muddle between sips.

Tropical Runner

1 banana
1 8 ounce canned crushed pineapple in juice
1/2 cup pina colada, liquid mix
1/2 cup orange sherbet
2 cups ice
Cut the banana in half and slice two 3/4″ slices from the middle of the banana and set aside for garnish.Put the rest of the banana and the remaining ingredients into a blender in the order listed.  Blend on high speed for 15-30 seconds or until the drink is smooth and creamy.  Add the banana slices to the top of each drink as a garnish.

Strawberry Banana Smoothie

1 cup ice, crushed
1 cup soymilk, Very Vanilla Silk brand, add more if needed
1 cup vanilla yogurt
2 bananas, sliced, frozen
1 cup frozen strawberries
1 tablespoon Splenda (optional)

Mix in blender until smooth.

Peanut Butter Shake

1 cup vanilla ice cream, or chocolate
1/4 cup milk
2 tablespoons peanut butter

In a blender container, blend together ice cream, milk, and peanut butter. Makes 1 or 2 servings.

Gold Medalist Smoothie

8 ounces frozen strawberries, not in syrup – do not defrost
1 banana
1 cup pineapple juice
2 tablespoons coconut cream
1/4 cup grenadine
1 cup ice
2 fresh strawberries, for garnish

Pour all ingredients, except for the garnish, in the order listed into a blender and blend on high speed for 15-30 seconds, or until all the ice is crushed and the drirnk is smooth.  Garnish each drink with a fresh strawberry.

Fruit Smoothies

2 -8 ounces yogurt, fat free – vanilla
2 bananas, small ripe, sliced, frozen
1 cup strawberries, sliced, frozen
1 cup berries, such as raspberries, blueberries, blackberries, frozen

In a blender container, combine yogurt, bananas, and berries; cover and puree until nearly smooth.
Makes 4 servings.

Elvis’ Favorite Smoothie – Banana & Peanut Butter

1 cup ice, crushed
1 cup soymilk, I used Silk Chocolate
2 bananas, sliced and frozen
4 tablespoons peanut butter

Mix all ingredients in blender.  If needed, add more soymilk.

Egg Nog

6 large eggs, lightly beaten
3/4 cup sugar
2 cups milk
1 cup brandy (optional)
1/4 cup rum (optional)
1 tablespoon vanilla extract
2 cups whipping cream
Garnishes: whipped cream, grated fresh nutmeg

Stir together egg and sugar in a large saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, 18 to 20 minutes or until mixture thickens and coats a metal spoon. Remove from heat; stir in vanilla and if using, brandy and rum. Cover and chill 8 hours.

Beat whipping cream at high speed with an electric mixer until soft peaks form; fold into chilled egg mixture. Garnish, if desired. Yield: 8 cups. Prep: 30 min., Chill: 8 hrs.
