Pesto Parmesan Panko Fish

Pesto Parmesan Panko Fish

Delicious fish prepared with a pesto-Parmesan topping, sprinkled with panko bread crumbs and baked until the top is crispy  and the fish underneath is tender and flaky.

Ingredients:

Fish fillets (tilapia is shown above)
mayonnaise
pesto
Parmesan cheese
panko bread crumbs
lemon juice

Lightly sprinkle the bottom of your baking dish with lemon juice and lay the fish fillets in the baking dish.

Mix together the next 2 ingredients.  How much depends on how much fish you are cooking.  Per fish fillet, use 1 tablespoon mayonnaise and 1 teaspoon pesto.  Spread about a tablespoon of this sauce on top of each fish fillet.  Lightly sprinkle Parmesan cheese over each fish fillet and then sprinkle Panko bread crumbs on top.

Bake in a preheated 350ºF oven for approximately 15 minutes.  Test the fish to make sure it’s cooked through.  It should flake easily.

Citrus Glazed Ham

This zesty glaze makes a fully cooked spiral sliced ham sweet and sunny.  Use the same glaze as for Citrus Glazed Yams.

1 cup orange juice
2 heaping tablespoons orange marmalade
2/3 cup firmly packed brown sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 teaspoon vanilla extract

Combine orange juice and next 5 ingredients in a small saucepan, stirring well.  Bring to a boil.  Boil until thickened, about a minute.  Remove from heat.  Stir in vanilla.

Place a fully cooked sliced ham in a baking dish.  Pour the glaze over, fanning out the ham slices to get some glaze between the slices of ham.

Bake in a 350º F oven for about 40 minutes, just until the ham is heated all the way through and the glaze is bubbly and thickened.

Easy Marinara Sauce

Never buy Spaghetti sauce again!  Try my super easy marinara sauce which has only 5 ingredients and tastes just as good as you’d get at an Italian restaurant!

1 (28 oz) can crushed tomatoes
1 heaping tablespoon minced garlic
2 heaping tablespoons pesto sauce (Classico)
2 teaspoons sugar
1 teaspoon fresh ground pepper

Combine all ingredients in a saucepan and simmer for 20 minutes.

*You can add frozen meatballs if you like Spaghetti with Meatballs.

This is my own personal recipe and it’s my easiest dinner to throw together.

Outback Steakhouse Marinade

1 cup Scottish ale
2 teaspoons brown sugar
1/2 teaspoon seasoned salt
1/4 teaspoon ground black pepper
1/4 teaspoon Accent Flavor Enhancer

Place your favorite cut of steak in a shallow pan and pour ale on steak and marinate for 1 hour in refrigerator. Remove steak from ale and mix dry ingredients together and rub steak on both sides.  Let marinate with dry ingredients for 1/2 hour.  Preheat a skillet or grill to med high heat add vegetable spray or vegetable oil and braise to perfection

Mom’s Spicy Roast Beef Topping

1 cup ketchup
3-5 Tablespoons Worcestershire sauce
1 small onion diced small
Mix the above ingredients together. Add as much Worcestershire sauce as you like. Let this sit in the fridge for an hour or more. Use as a spread for sliced roast beef sandwiches.

White Wine Pasta Sauce

1     WHITE SAUCE / CHEESE SAUCE
1/4   cup Parmesan cheese
white wine
dash garlic powder

Make the white sauce recipe but substitute 1 cup of white wine for 1 cup of milk.  Season with a dash of garlic powder and stir in parmesan cheese.

White Sauce / Cheese Sauce

3 tablespoons butter
3 tablespoons flour 
4 cups milk
salt and pepper
Melt butter in saucepan.  Sprinkle with flour and salt & pepper.  Cook while whisking with wire wisk for a couple minutes.  Slowly stir in milk while continuing to whisk over medium heat.  Simmer until thickened.  Remove from heat. 
*To make cheese sauce, add 2 cups shredded cheese and a dash of dried mustard, paprika and cayenne.

White Barbecue Sauce

1 1/2 cups mayonnaise
1/4 cup water
1/4 cup white wine vinegar
1 tablespoon coarsely ground black pepper
1 tablespoon creole mustard
1 teaspoon salt
1 teaspoon sugar
2 cloves garlic, minced
2 teaspoons prepared horseradish
Mix all ingredients well.  Store in refrigerator.

Wasabi-Ranch dressing

1/2 cup bottled hidden valley ranch salad dressing
2 tablespoons buttermilk or whole milk
1 teaspoon prepared horseradish
1/2 teaspoon wasabi powder
1 drop green food coloring 
Combine all ingredients.  Refrigerate.
